Harissa Tuna Pasta Bake
I love a quick and easy dinner. This is my take on the classic tuna pasta bake. It has a lovely fragrant kick from the harissa paste and plenty of vegetables hidden beneath. I have added some black olives and feta for more flavour. This is a recipe the family will love!
Recipe-
400g tinned chopped tomatoes
2 tins of tuna in spring water
300g dried pasta- I use Conchiglie
1 Tbsp rose harissa paste
80g feta cheese
Large handful of torn spinach
1 yellow pepper
1 red onion
2 large cloves of garlic
2 Tbsp black olives chopped
Salt and pepper to taste
Pecorino- grated to top
Instructions-
Preheat the oven to 180 degrees
Chop the yellow pepper, red onion into large chuncks and peel the garlic. Add these to a oven proof dish with a little olive and bake for 30 minutes.
Boil the pasta for a 5 minutes under the specified time on the pack.
Drain the pasta and add to a baking dish along with the tomatoes, harissa paste, olives, feta, spinach, cooked pepper & onion. Chop the cooked garlic and add to the dish.
Lastly flake the tuna into the dish and lightly mix.
Layer with some grated pecorino and bake for 20 minutes.
